Staviti filete u marinadu od soli i maslinovog ulja, dobro pome\u0161ati, ostaviti na hladnom za sat ili dva. Ostalo meso ise\u0107i na manje komade. Staviti vrganje u mlaku vodu, da se rehidriraju. O\u010distiti od \u017eilica d\u017eigericu i pr\u017eiti je na buteru, lako posoliti, pustiti da se ohladi \u2013 to se jedino prethodno pe\u010de. Ise\u0107i suvi vrat na kocke, odvojiti crevo i izvaditi meso iz kobasice. Prepoloviti crni luk, \u010desan ostaviti ceo. Ocediti dobro vrganje. Sve sastojke (komade \u0107ure\u0107eg mesa, druga mesa, za\u010dine, jaje, konjak, pe\u010denu d\u017eigericu sa buterom od pe\u010denja) oprezno posoliti i pobiberiti, staviti u mikser, izmiksati.<br \/>\nU duguljastu posudu sa malo poma\u0161\u0107enim dnom (maslinovo ulje) postavite smesu za pate (cca 2 cm), pa polo\u017eite prva dva fileta, zatim ponovo malo mase, pa fileti. Gornji sloj mora biti masa. Nakapati malo maslinovog ulja i staviti u pe\u0107nicu na 180C, nepokriveno, za 45-50 min. Ocediti mast, pustiti da se ohladi.<br \/>\nPile\u0107u ili neku drugu bistru i razma\u0161\u0107enu supu staviti da se ugreje. Za to vreme rastopiti \u017eelatin u malo tople vode i prstima ga izvu\u0107i, dodati supi. Ako ho\u0107ete malo intenzivniju boju, dodajte ka\u0161i\u010dicu soja sosa. Dobro prome\u0161ati, ne treba da provri. Sipati u posudu u kojoj je pate, tako da pokrije sva prazne prostore, a mo\u017ee da pokrije i pate. Sa\u010dekati da se \u017eelatin malo stvrdne, pa po potrebi dodati jo\u0161 supe sa \u017eelatinom. Ako imate suvi\u0161e supe, izlijte je u ravnu nisku posudu, pa \u0107ete mo\u0107i da izre\u017eete kockice \u017eelea za slu\u017eenje uz pate. Staviti smedji \u0161e\u0107er i za\u010dine sa kru\u0161kama u posudu, doliti celo crno vino, dovesti do klju\u010danja, odmah smanjiti vatru i kuvati na ni\u017eoj vatri oko 15 min. Ostaviti kru\u0161ke da se ohlade potopljene u vinu, kako bi dobile tamnu purpurnu boju. Moraju ostati cele. Izme\u0161ati mascarpone sa \u0161e\u0107erom i limunovom korom, staviti u manju plasti\u010dnu kesu. Pore\u0111ati oce\u0111ene kru\u0161ke u posudu za slu\u017eenje, odse\u0107i \u0107o\u0161ak plasti\u010dne kese i ukrasiti svaku kru\u0161ku mascarpone kremom. Operite brusnice. Iseckajte grubo orahova jezgra i le\u0161nike. Pome\u0161ajte dve vrste bra\u0161na, izmrvite u smesu omek\u0161an buter, suvi kvasac, so, sodu bikarbonu. Dodajte malo pomalo pivo, umesite glatko, elasti\u010dno testo. Dodajte po \u0161aku smese zrnevlja i vo\u0107a, dok ne upotrebite sve. Kad je testo ume\u0161eno, postavite ga u duguljastu posudu na toplo da naraste. Nama\u017eite dno posude uljem, nama\u017eite povr\u0161inu testa uljem, stavite preko providnu foliju \u2013 labavo, tako da se zalepi uz testo. Pustite da raste 1-2 sata. Ugrejte pe\u0107nicu na 220 C. Podelite testo na dva dela i postavite u dve duguljaste posude, nek se podigne jo\u0161 malo dok se pe\u0107nica greje. Stavite u pe\u0107nicu oko 35 min ili malo du\u017ee. Propr\u017eiti na ulju sve dok luk ne postane providan. Staviti u mikser sve ostale sastojke i pr\u017eeni luk sa \u0107umbirom.
